Another great treat for a Father's Day breakfast. This sweet and salty granola is miles above any other. Served with ice cold milk or scattered over Greek yoghurt, what more could any father wish to wake up to on his special day?
Ingredients (makes a lot)
- 400g jumbo rolled oats
- 150g sunflower seeds
- 150g poppy seeds
- 200g salted peanuts
- 150g bramley apple sauce
- 75g dark brown muscovado sugar
- 150g runny honey
- 2tsp ground cinnamon
- 1/2tsp sea salt flakes
- 150g dried cranberries
- 150g dried apricots, coarsely chopped
Preheat the oven to 170C/150C fan. Place all of the ingredients, except the cranberries and apricots, into a large mixing bowl and mix together with a large spoon until everything is more or less evenly dispersed. Scatter onto a large baking sheet, or two medium baking sheets, and dry out in the preheated oven for 1 hour, though every 15 minutes shake the trays, or rearrange the granola with a fork to prevent it burning.
Remove from the oven and allow to cool and crisp on the trays, then toss together with the dried fruits, before storing in a large airtight jar.
